History

The term 'Ripasso' literally means 'repassed' and refers to the process of second fermentation the wine undergoes on the skins of grapes used for Amarone, a technique developed in the 1980s. This method enhances the structure, longevity, aroma, and alcohol content of the wine, leading to the creation of Valpolicella Ripasso DOC.

Valpolicella Ripasso DOC is produced in the Veneto region, specifically in the Valpolicella area located in the province of Verona. The region is characterized by its mild, temperate climate, and calcareous and clayey soils, which are ideal for the cultivation of Corvina, Rondinella, and Molinara grapes used in the production of this wine.
